Coconut & Lime Mini Loaf

Double recipe this week!

Last week my sisters had some days off, the weather wasn’t the best so we stayed at home relaxing and eating a lot! My favourites were this Lime Mini Loaf with coconut milk, they were so soft and juicy, they were delicious! The sugar syrup on top was like the cherry on top of the cake!

But let’s see how we made this Lime mini loaf:

COCONUT & LIME MINI LOAF

  • 125 g unsalted butter
  • 4 tablespoon coconut milk (you can also use other types of milk)
  • 2 eggs
  • 175 g self-raising flour
  • 175 g caster sugar
  • zest of one lime
  • pinch of salt

For the syrup:

  • 4 tablespoon lime juice (of 1-2 limes)
  • zest for decoration
  • 100 g icing sugar

Preheat the oven at 180 °C.

Mix together butter and sugar, then add eggs and lime zest and beat well the mixture.  Add flour and salt, then the milk. Put the mixture into a mini-loaf tin and cook for about 25 minutes, if you use, instead of the mini-loaf tin, a bigger tin you have to leave them in the oven a bit more like ten minutes. (We used paper loaf tin from the supermarket and we left them in the oven for about 30- 35 minutes.)

While the mini-loaf are baking, you can prepare the syrup.

Into a small saucepan pour the lime juice and sugar and heating it until the sugar dissolves.

When the mini-loaf are ready, pinch them with a toothpick all over, but leave them into the tin! Then pour over the syrup and let the loaf absorb the syrup in the middle and at sides.

When they have cooled and the syrup is absorbed, get them out of the tin and serve with a bit of lime zest at the top.
