This summer I baked a lot with my sister, (I think I’d baked more in three months than in all my life!). She found this simple recipe for pastry some month ago and she tried it multiple time.
Together we looked for new fillings and thanks to this warm summer in London (not any more now -.-), we used to try cold fillings. This time we tried with nutella and coconut, such as the little snack Bounty with chocolate shell and coconut filling inside. So here’s the reason of the recipe name. I know that normally in Bounty there’s no nutella, but only chocolate on the shell, but why not add some chocolate inside?

Let’s have a look at the recipe for this Bounty Pie:
BOUNTY PIE WITH COCONUT AND NUTELLA
- shell of brow sugar pastry, you can find here the recipe
- 2 eggs
- 350 g mascarpone cheese
- 3 tablespoon caster sugar
- 3 tablespoon dehydrated coconut
- 3 tablespoon nutella
When the shell of pastry is cooked and cooled, you can start preparing the filling.
In a mixing bowl, mix together eggs and caster sugar until fluffy. Add mascarpone cheese and mix well, until you have a cream without lamps.
Then add nutella and coconut and mix well. When it’s all well mixed, pour the mixture into the shell, sprinkle with extra coconut and refrigerate it for 2 or 3 hours.
Serve it cold and eat until you can! We loved this delicious invention. So with the recipe of this simple pastry, you can add some of your fantasy and you’ll have amazing cold tarts for the summer!
